Thai Salad with Carrot and Cucumber
serves 4
Ingredients
- 1 T lemon juice
- 1/2 T olive oil
- 1/2 T sesame oil
- 1 t dill
- 1/2 t garlic powder
- 1 T sesame seeds
- 2 C chickpeas
- 1/4 C cilantro, chopped
- 1 ea cucumber, chopped
- 3 pc scallion, chopped
- 2 carrots, chopped
Instructions
- Whisk together the lemon juice, olive oil, sesame oil, dill, garlic powder and sesame seeds. Season to taste.
- Toss the remaining ingredients in the dressing.
- Plate and serve chilled.
